Bossa Nova regional blend comes from Cerrado and Sul de Minas. Both regions are well known for their coffee production. Cerrado is one of Brazil’s most productive coffee regions for consistently high-quality coffee, Sul de Minas is the largest coffee-growing region in Brazil, about 30% of the country’s coffee is grown here. It lies at an average altitude of 950 m.a.s.l and has a mild annual temperature of about 22 degrees Celsius.
The cupping lab in Patrocinio evaluates samples from about 600 farmers in the region with a focus on to developing this signature profile, highlighting the well-known flavours of Brazilian coffee. The chosen lots are then sent to our importer's warehouse in Varginha where they are sorted by screen size, defects are removed as well ahead of the coffee being prepared for export either to the dry port in Varginha or to the port in Santos.
Korongo is sourced from a network of washing stations across Mbozi, Mbeya & Mbinga, in Tanzania’s Southern Highlands.
Vertical-integration and whole-harvest sourcing enables our importer to source Korongo at an accessible price that supports roaster success and producer resilience. Korongo displays the best of Tanzanian flavor profiles with a full body, pronounced sweetness and light acidity.
Farmers hand-harvest and process the cherries on their own farms, in general, cherries are pulped using either an eco-pulper or standard pulper and then fermented. Following fermentation, parchment is dried on raised beds for 14-20 days.
Tasting Notes: Dried strawberries and raisins, sweet and juicy with long lasting creamy hazelnut and milk chocolate body.
