About The Coffee
This naturally processed lot comes from La Finca La Fila, a 2-hectare coffee farm in the Huabal district of the Cajamarca region.
Urilser Olivera and his family own La Fila, and his parents were also coffee producers. The farm is mainly planted with Catuai, as it is a particularly popular varietal amongst Peruvian growers. Good cup quality, productivity and resistance to oxidation make it a very popular and financially secure cash crop.
Urilser and his family do most of the work on the farm, from cultivation, to harvest to processing; they hope to expand the productive area of the farm in the future to plant more exotic varieties that stand out for the quality.
In recent years Urilser has been experimenting with fermentation techniques to improve the quality of his coffees; using tanks, sterile plastic bags and new drying infrastructure.
They also carry out agronomic activities to maintain the productivity of the soil using small amounts of chemical fertiliser combined with decomposed organic matter, all cultivation and harvest on the farm is manual.
This lot is fermented for 5-8 hours before being processed as a Natural. Mainly Urilser produces Washed coffees but with more experimentation into Naturals and Honeys, this is a good indication of the types of fermentation techniques we can expect from La Fila.
