Antonio is a 4th generation coffee farmer who has invested in improving the ecological sustainability of his plantation. A quarter of his property is planted with coffee, the rest is certified protected native forest. The upper portion of his property has been given to the indigenous communities who work on his farm. Shade trees Antonio has planted protect the land from erosion & offer a habitat for local birds.
ripe coffee cherries are harvested & processed right next to Antonio’s home in the middle of the farm. After de-pulping the coffee, it sees a 36-hour dry fermentation heaped in concrete tanks before being washed the traditional way, with collected natural spring water in long, narrow channels.
