Saldarriaga is a producer who has two farms; La Claudina & El Encanto. they are around 60 hectares each, but only 42 of which are planted with coffee. The rest is still forest & natural reserve.
A big challenge in these environments is the drying, due to humidity and temperature. Juan has constructed drying facilities with raised beds under covers. He has also installed a machine that can dry with cold air & with software where you can adjust temperature, airflow etc & make profiles on different coffees.
La Claudina has 1 person managing 42 pickers. the coffee is picked by block & separated so it can be processed by cultivar. The pickers get a good premium for every bag of high quality cherries sorted.
