Organic production is widespread in Ethiopia, where in many countries this is unviable due to pervasive disease. it may be the diversity afforded by the forest growing environment slowing the spread of disease.
Located in the west of Ethiopia in Limu Kossa, Gidey farms his coffee on a 350 hectare farm which is meticulously maintained. The land was once wild forest and has been thinned slightly to accomodate the coffee, but the feeling of quiet solitude pervades amongst the native trees.
This natural process is dried for 24 hours under cover before being placed in the full sun for a further 7 days.
