In 2013 El Salvador was devastated by the roya (leaf rust) outbreak & many coffee farms produced negligible to nil coffee volume. However, diligent & progressive producers are coming back with improved volume & quality.
Ricardo & the team at the mill have been experimenting with processing methodology to add flavour & value to their coffees. The mill is run by CQI Level 2 processors ensuring scientific process is applied throughout. This natural process coffee is dried in raised beds under semi shaded conditions for an average of 22 days drying in cherry.
