Static Box Natural
Coffee cherries are separated using density which signifies level of ripeness. The static boxes have vents allowing cool air to circulate, slowing the fermentation process then increasing heat for between 7 &10 days. Thermometers at different depths ensure temperatureS below 40c. This process is named 'static' due to the coffee remaining un-turned or rotated during drying.
This method has allowed the production of more fruity & prominent profiles from the usual profile we associate with Brazil natural coffee.
