About the coffee

Farm: Jorge and Judith Herrera
Region: Huehuetenango
Type: Bourbon, Caturra, Typica
Altitude: 1,600-1800 masl

Finca Marilandia has been handed down from generation to generation since 1955 when the farm was initially purchased by Carlos Herrera, who has now handed the farm down to Jorge and Judith Herrera. For years they have managed the farm with the greatest attention to detail in order to take advantage of the great location, micro climate and quality. They have recently focused their attention on sustainable practices on the farm in order to be in peace with their environment and have developed social focused practices. This has allowed them to be qualified for the following certifications: Rainforest Alliance, Utz Certificate and
C.A.F.E. Practices.

The very tight management of the picking of Finca Marilandia can be tasted in
the cup. They harvest only once the cherries reach an optimal and uniform
maturity. They DE pulp the same day and ferment for 24 – 36 hours depending on the climate and other conditions, then wash the coffee to get rid of any
extra mucilage. The coffee is sun dried for 10 days until it reaches 11.5 – 12%
moisture.
